What is beef brisket?

Beef brisket is a cut which comes from the chest area of the cow, and which boasts a winning combination of rich, robust flavor and melt-in-your-mouth tenderness. Brisket as typically found in the UK and Ireland is subtly different from the American cut, which is perhaps better known internationally. Whereas in the USA, brisket is defined as coming from just above and between the forelegs, the brisket you’ll find in this product is from a little further down the cow’s chest, behind the forelegs.

Thanks to its mild, wet climate and rolling hills, Ireland’s terrain is perfect for raising cattle. This results not only in milk, butter and cheese which are world-renowned for quality, but also outstanding beef.
