Well here’s something a little different. These amazing savoury biscuits aren’t exactly crackers – they’re really a derivative of good old shortbread – but they are certainly towards the salty end of the spectrum, even if they do retain a fair bit of sweetness. They’re deliciously different, dangerously moreish, and we’re delighted to bring them to you.

The Lismore Food Company is renowned throughout Ireland for their range of luxurious products, from biscuits and chocolates to chutneys and jams. Caraway and seaweed? How intriguing.

We quite agree! Seaweed in its various forms has been a key component of the Irish diet since time immemorial, at least in coastal areas. While the tradition of gathering and preserving it died out somewhat in the 20th century, it’s made quite a comeback in recent years as people have rediscovered this abundant natural crop right on their doorstep. The particular seaweed used in these biscuits is a form of kelp sometimes known as Irish wakame, due to its similarity to a famous Japanese variety. Not only is it intensely tasty, it’s also highly nutritious, and it’s great to see it finding its way into luxurious products such as these. Add a little caraway seed and things get really interesting.

What else is good about these biscuits?

In a word: butter! Specifically, Irish butter. It’s world-famous for a reason. These savoury biscuits are made with generous quantities of it, and that’s the key to their rich flavour. are spectacularly, indulgently rich, and it’s all down to that Irish butter. The Lismore Food Company use nothing else – no oils, no margarine, no cheaper substitutes. Only the good stuff.

What’s the best way to enjoy these savoury biscuits?

They’re quite delicious on their own, but we find they go particularly well with some good cheese and a nice chilled glass of dry white wine. Or how’s about some whiskey finished in riesling casks?
