Don’t worry, you’re not on the wrong website, this delicious condiment really is Irish! Although this Black Bean Rāyu is inspired by flavours from Japan, Korea and China, It’s produced by Dublin-based White Mausu.
At Dalriata, we aim to offer products from small, independent manufacturers as well as the usual big brands. White Mausu’s products were among the first things we sold right at the start,when we were just a pop-up store in an ice cream shop that was closed for the winter. They were a huge hit with our customers, but for a while we couldn’t get hold of any, and so had to stop sellng them. But now, after a long absence, we’re happy to say they’re back on the shelves of our Berlin store, as well as online.
What is White Mausu Black Bean Rāyu?
One look at the exquisite design of this glass jar will tell you that this is a product made not only with love, but also with care and attention to detail. The main component is Chinese black beans, which have a wonderfully complex, savoury flavour bursting with umami. Rich and a little fruity, but also earthy and slightly smoky, they’re full of the balanced contrasts so typical of the best of Asian cuisine. The chilli adds piquancy, and the spices round things off with their vibrant, fragrant notes. It’s delicious stuff.
What can I do with White Mausu Black Bean Rāyu?
If you can resist the temptation to just spoon it straight out of the jar and into your mouth, you’ll find all sorts of ways to make use of this exciting condiment. It’s great as a dip for eggs, meats or especially fish. Boil or fry some crunchy broccoli and pour a little bit over the stalks. Or mix a little in with boiled rice to liven things up.
