We realise this stuff doesn’t sound very Irish, but it is! Made by Dublin’s own White Mausu, this Peanut Rāyu is inspired by flavours from Japan, Korea and China, but is very much a product of the Emerald Isle.

At Dalriata, we love to feature products from small, independent manufacturers alongside the household names. We started selling White Mausu products right at the beginning, when we were just a pop-up store subletting an ice cream shop for the winter. They were hugely popular with our customers, but for boring logistical reasons, we couldn’t get hold of any for a while. Now, after far too long, we’re proud to bring them back to the shelves of our Berlin store, and also online.

What is White Mausu Peanut Rayu?

This chilli oil with a twist is a distinctly Irish take on a classic Japanese taberu rāyu, or chilli oil. On its way to the other side of the world, it’s picked up a little Chinese and Korean influence, and is all the better for it. ]White Mausu took their beloved Original sauce and gave it an extra hot makeover by adding some serious heat from chili de arbol peppers. This spicy kick is expertly balanced with the same infused base of gochagaru (Korean chili flake) that you know and love.

But what really sets this sauce apart is its unique combination of roasted peanuts, sesame, and crunchy fried garlic. These textures add a satisfying crunch and nutty depth to the sauce, making it an absolute joy to eat.

What can I do with White Mausu Peanut Rayu?

There are so many ways you can use this delicious chilli oil. It’s capable of livening up just about any dish you can think of. Drizzle it over boiled, fried or especially roasted vegetables and give them a tingly, savoury kick. It’s just as good in salads, too. Add some to a tomato salsa for an unorthodox, but interesting twist on a Mexican classic. Use it as a dip alongside pickles or even grilled meats. Or just spoon it into a sandwich! No doubt you’ll have some ideas of your own, but it really rewards experimentation – it’s incredibly versatile stuff, and it’s pretty hard to go wrong. Adding to our infused base of gochagaru ( Korean chilli flake) and a signature blend of chilli flake we've sourced some delicious chilli d'arbol thats given this some extra oomph. All mixed in with roasted peanuts, sesame and crunchy fried garlic.

Its an every day sauce for every day food. Its gorgeous on noodles, dumplings and loves to be center stage on a bowl of rice but its equally delightfull on top of morning eggs, drizzled on some leftovers or used as the gateway to eating lots more veg!
